Ingredients
100 gm Iron Bajra Rawa
1 tbsp Oil
1/2 tbsp mustard seeds
1/2 tbsp cumin seeds
1 tbsp Urad dal
1 tbsp Chana dal (split chickpeas)
1-2 green chilies, finely chopped
1-inch gnger, grated
1 small onion, finely chopped
1 small carrot, finely chopped
1/4 tbsp turmeric powder
Salt to taste
1.5 cups water (adjust as needed)
Coriander leaves
1 tbsp lemon juice (optional)

Instructions
1. Heat oil in a pan and roast Iron Bajra Rawa on medium heat for 2-3 minutes until aromatic. Let it cool.
2. In the same pan, heat 1 tbsp oil, add mustard and cumin seeds. Once they splutter, add urad dal and chana dal, frying until golden. Add onions, green chilies, and ginger, and sauté until onions soften. Toss in carrots and sauté for 2-3 minutes.
3. Add turmeric and salt, then pour in water. Once boiling, gradually add roasted Bajra Rawa, stirring to avoid lumps.
4. Fluff the upma, garnish with coriander, and add lemon juice if desired. Serve hot.
